Country 57/196: Italy. If there is one nation’s cuisine that I would happily devour for the rest of my life it would be this fine country, and that’s despite the hopelessness of explaining veganism. From the mountainous, lake-saturated north to the picture postcard, rolling Tuscan heartlands to the endless sun-drenched south, it would be easy to spend an entire year touring its perfect piazzas and hilltop hamlets. I defy anyone not to fall in love even just a little here. Just be sure never to order a cabbage pizza, whatever the server tells you.
